Today we will share probably one of the super easiest recipes ever. Today we will be making #vegan Qutab (an Azerbaijani dish). We love having qutab with a soup.
• 3 cups white flour
• 1 tsp salt
• 1 cup of water
• 1 tbsp olive oil
• green mix (parsley, dill, onion) - available at any local grocery stores (Rimi, Selver, Maxima, Delice, etc.)
• spice mix (sweet pepper, chilli pepper and smth of your own taste)
Step I - dough
Add 3 cups of white flour into the bowl. Add salt and add a cup of water. Mix everything until the dough is ready. Cover the dough with a plastic wrap and leave it for 10-15 minutes.
Step II - greens
Chop all greens all together and put them into a separate bowl. Add oil and spice mix. Mix all together.
Step III - making the Qutab dough base
Cut small piece from the dough and make a round base; d= 10cm. Make it very thin.
Step IV - add the green mix
Add the green mix on the top of one of the sides (add quite a big amount of the mix, but not a whole “mountain”). Close the dough with the uncovered side (just like quesadilla or calzone).
Step V - frying
DO NOT add any oil. Pre-heat the frying pan (I was frying at the heat level of 6 [out of 9 max], otherwise I’d burn then dough, please adjust the temperature based on your equipment). Once heated (it must be very hot) put one of the Qutab doughs on a frying pan and fry for about a minute or so on one side and then flip on the other side. Once ready, add some extra olive oil (or if you have a great spice mix oil) on top of the Qutab.
